Did using only frozen Raspberry by soaking the whole raspberry i think the seeds made it bitter ,will try next time by making a sauce cooking to removing seeds .Lemonade make it drinkable may have lacked sugar.

Finally tried some infusions in the last month, after nearly 6yrs of using essences. Have 9 jars so far, banana, mango, raspberry, lime, mixed berries, and strawberry. Thinking of watermelon or pineapple next.

Just made some Lime, Orange, Lemon and Strawberry using the tincture making method in some 95% as per Doc’s instructions.

Man this is soooooo good just on ice (watered down to 40%), and a mix of the lemon & lime together :D :drool:

The strawberries were 49 cents a punnet :happy-partydance: (big season over here) so there is a heap in the freezer to last till next season.

Give it a go and stay away from the essence you will be glad ya did :handgestures-thumbupleft: .

This was my first go at it and I'm very pleased with the outcome.

Just sitting back and having a sip on ice at the moment waiting for a bit of a thunder storm to roll in :D

No worries Mac would be glad to.

Maybe i'd be able to get over there one day to one of those great events you have and do a bit of product sampling

G'day Guys

Just a question, does Stevia affect the alcohol reading?

Following Docs recomendations (& being a cheap skate, I've streched the amounts a bit lol) I steeped 500g of frozen Raspberries in 2L of 89% nuetral for 1 week. I boiled 200g of Stevia in 2L of water & cooled. I strained the raspberries through a fine strainer & filtered the liquor twice through coffee filters. I also ran the Stevie mix once through a coffee filter.
I then added the raspberrie liquor to the Stevia mix & shook.
I was then going to adjust the ABV with 40% neutral as per Docs instructions so I took an ABV reading with an alcometer & it only showed app 15%.
I took a shot (very nice) & it certainly feels to me like it's more up around the 40%+ mark.

Any thoughts, thanks.

alcometer only works on alcohol and water .

I think he's asking if stevia affets the gravity of the potion. Same as you can't take an alcometer reading after adding sugar.

I don't know mate, I have always added sweeteners last. If you know for sure how much alc you started with it's easy to work it out backwards

Yep, was 2l of 89% nuetral added to 2L of Stevia/water mix so should be app 44% IMHO. The app 15% alcometer reading had me stumped.
Guess I'll just have 2 gauge how effected the little old lady gets while drinking it o:-)

2L @ 89% Can be worked out as 2000(ml) * 0.89 = 1780 ml or 1.78L
I've come across this same problem in the past. no matter how much u add just divide 1.78L by the final volume and multiply by 100 to get the percent. :handgestures-thumbupleft:

So I tried the kafir lime leaves and also did a maceration of mint. Left them for 24hours, which was probably too long in hindsight... Then I mixed 400mls of each with 400mls of the stevia mix of 200g/L, then topped up with about 300mls of water to bring down to bout 35%.

This morning I took a look and there is like floating strings of stuff in the lime one? And neither of them have gone as cloudy as the ones in the pictures... Taste is ok, but not sure I like it.

Not sure I would repeat either of these flavours, gonna have a try with some orange or mandarin this weekend.

Best way is to use the zest (outer skin) and not the white pith.

I also tried mandarin seqments but did not crack them open - very slow result!

Recently I have used this tincture method to make flavoured vodka with Strawberries, Blueberries, Cherries, Lemon, Raspberry and Kiwifruit. They all came out pretty good, so I got thinking… what about ginger vodka???

I am going to cultivate all my ginger this week, I generally pickle it or dehydrate it for use throughout the year.

My obvious question is, has anyone tried to make ginger vodka using this tincture method?

Once the ground dries out enough to cultivate the crop, I'll put some in azeo and report back on the results.
