Jd smoking pellets

Postby BIG D » Sat Mar 29, 2014 8:56 pm

I have just tried some of these in a rye whisky with good results just wondering if anyone has tried this before?

Beuller ? Any one ? ...

so no one has ever tried to replicate a JD bourbon by using a JD grain bill then aging with a handful of these pellets with american oak

Since aren't the pellets just the charcoal maple pressed into pellets ?

I'm assuming not to many people have tried this  I can say with confidence if you like a Tennessee style whisky get on board adds a much more authentic maple finish to the drink than maple syrup :handgestures-thumbupleft:

On Linnys advice I have 3 jars of 6 month old BWKO with different amounts of these pellets in them. See how they go.

Are these not pellets used for smoking meats etc? But I guess if they are just maple charcoal it could be a good source for it.

Yeah, they are charcoal maple pellets from Jack Daniels. They are the charcoal JD use to filter through. After they've used them, they press them into pellets for smoking

I honestly reckon that if you use the grain bill given for jd here and put some of this on you can get bloody close if not better... Just have to play with ratios

Nearly 12mths on. .. Are these pellet's still the go for producing a tenessee style american whisky?

Is there a grams per lt ratio?
And is the spirit being oaked in conjunction with these pellets? Heavy toasted american oak?

Yeah mate, i found that even less is required if your aging for a long time ,.. for example i had some bourbon that had 1/2 hand full ( sorry no measuring ever done) for 8 months , and the pellets broke down and was slightly overpowered and had to blend it with some newer batch.

when i age in 3L containers , if im expecting to age for long period i would only go 1/10th- 1/4 of a handfull to 3L @ 63% ABV. hope that makes sense... Remember Less is more for a long time

Thank's for the reply Linny.

I'm always aiming for long term aging. .. even if it means I have to purchase a bottle from time to time.

I'll go easy on the pellets using a 1/4 imperial Linny hand full per 3lt. Are you using oak with the pellets?

I thought these were made from their used mellowing charcoal. They slowly filter JD through it after it comes off the still to "mellow" or remove the off flavors out of the spirit it before it goes into barrels for aging.

This is essentially charcoal filtering the undesireable congeners out of their product before it goes to aging. Maybe I'm missing something but why would soaking your spirit in charcoal packed full of JD's undesireables be a good thing for your drink?

I saw the Mega factories documentary on Jack Daniels factory. was very interesting. And this is a good point CH3CH2OH ....

would you soak spirit in spent carbon filters? nope

What a seriously good point. One I'd never considered.
I'll stick with oak off the barbie, in the jug.
Cheaper too.

With the oaking i used alligator charred dominoes at the same time... With the those with the opinion of not doing it , great... that's not what this thread is for. This is just another method to get Tennessee style, which is the maple flavour without the sweetness of using Syrup. Yes its the left overs , but unless you have access to your own maple charcoal i wouldn't be knocking it. Especially if you haven't even taken the time to attempt the experiment yourself.

A better analogy would be a carbon filter with holes cut into it. :))

Sounds more like JD process is 1/2 filter and 1/2 flavour enhancer.

Didn't mean to offend you Linny.

For those of us that have charcoal filtered our spirits and if you have ever reclaimed the charcoal through a process like described in Strand's book on activated carbon, you know what comes out of it when you clean it.

Stand's Activated Charcoal Book

viewtopic.php?f=47&t=1888

Page 20

I am just comparing my experiences on what comes out when cleaning charcoal. I have never tried the JD pellets so I made the assumption that these pellets would be similar. If I am incorrect in my assumptions, I apologize.

This hobby is about making a product that YOU enjoy. If it works for you and you enjoy the drink that the process gives you in the end then that is all that matters.

Cheers

Its been nearly a year since i first gave the JD pellets a try, if your looking to create a JD style whisky this is a good tasting easy method.

I take 1lt new make BWKO (65%), 50g of smoking pellets and 10g of new medium toasted/charred oak (American) and age it for 6mths.

I double filter it then drink it as is or blend it 50/50 with another batch of BWKO, CFW ect. .

Its a decent drop.
