Maybe someone can fix Rush up with a few ltrs of proven good molasses to see if he can eliminate his still or fermenter being at fault.

Haha, to tell the truth, i didnt even take advantage of it! I was just stoked to see the bubbler working the way it was s'posed to. Sorted my cuts last night by smell. Got 1.5ltrs of 65% in bottles waiting for oak (23ltr wash). Had a taste tonight. Quite rough, but time should do its thing. Will cut up some am.oak sticks tomorrow out of offcuts from work.

Mate you won't look back. one of the best things I've done is make my own rum. Just in a spot at the moment. will sort it out soon I'm sure. Good luck.

once you have run your still for a while you will know where the hearts should start coming through, especially if you run the same recipe every time. I often taste a little at each stage of run to confirm if its a good ferment or not.

Hi Guys ,

Cheers for that i am trying to get my head around it a little before i do a rum run next week 1st time with the pot , i will most likely do a 3kg molasses , 3kg brown sugar 25 ltr wash for my 1st,on my strip run do i run the boiler at max watts 2000? any suggestions or advice would be greatly appreciated.

Yes, run flat out to strip.

If you haven't made your wash yet you will have at least a week to do some reading while you wait. Get to it bud.

Well finally back on track. All i can put it down to was a few really bad lots of molasses , not doing all the basic stuff when you first start, and winter hitting. I cleaned everything, striped the still and cleaned plates. Ive since got some half decent molasses and have been paying particular attention to the little things. i now have heat pads under my fermenters, I make sure the wash is well aerated before pitching yeast. I have really slowed down my takeoff as well. and all the small changes have got me back on track. I think i had started confusing myself as the different molasses's had totally different flavour profiles, combined with fermenting too cold. Nothing was tasting right. the last few ferments have been great and finally building up my ageing stock again. :cool:

There's a lot to be said about controlling the temperature of your fermenter. Yeast don't like temperature variations and react accordingly (off flavours). I control mine with an old fridge and heat pads (inside the fridge) during winter. Come summer, I take the heat pads out and plug the fridge in.

cheers fellas, still just use molasses from a stock feed place but the last lot is a product of Australia.It is some thick stuff and really strong good flavours. some of the other stuff in WA has been coming from overseas.
I think the temperature was my other issue. I didn't work it out because last winter i didn't run my still and the winter before that i was on the east cost and it never got that cold where i was. This winter has had my wash as low as 16 deg C. a couple of heat pads and the wash is back up to 30 deg. Ive just bought a bag of distilamax RM493EDV yeast to try out as I was starting to questioning everything. well it won't hurt to see the difference between it and lowans.

Hey . does anyone on here who makes molasses rum use a wine yeast ??? if so some info please , i am using 10grams per 25litre wash , wondering if it is enough
