pure corn sugarhead....

Postby Redux » Fri Dec 30, 2016 5:34 pm

ok folks heres what im going to try...

per 25 litre fermenter...

2kg cooked cracked corn
1/4 tsp citric acid
4kg sugar
safspirit yeast..

i reckon ill do 5 gens (strip to keg) then a 4 plate spirit run..

as with bwko ill swap out 500ml of the grains for fresh per gen...

hoping for a corny flavour, traditional moonshiney sort of. :handgestures-thumbupleft:

any pitfalls you guys can see?

Will you be cooking the corn? If so for how long?

I will be interested to see how this comes out :)

Yeah, I'm not there to taste test.
So I'm guessing you're going for an American bourbon like whisky?

Is this like a ujsm but mashing the corn for sugars and flavour not just fermenting on top of it for flavour?

Redux,
I did something similar about a year ago. 15kg cracked boiled for an hour in a bag, 15kg dex, filled up to 100L, then amercian whiskey.
1 run over 4 (maybe 5) plates. I don't have any notes on the cuts, but I remember being pretty tight. On Amercian oak, light - maybe 7g/l for 6 months. only a couple of bottled left.
I found it good and smooth but lacking depth. Good as a shot or a sip, but nothing lingers in the mouth. Good experiment, let us know how you go.

ujsm= bwko i think?

Very similar but ujsm uses 7 pound cracked corn no mash or boil and 7 pound sugar, bread yeast and that's it, do the generation thing then when you have 40-45 litres low wines do a spirit run.

I looked on here for it to as I had heard good results but its not here for some reason. I got my first gen going right now and hopefully do a striping run Sunday then fire up gen two. Just google search ujsm and you will find it, pretty easy recipe to follow :handgestures-thumbupleft:

Go for it but I'd be going higher probably 5-6 litres to go for that sour mash style. I've been doing 5 litres in a 20 litre wash and there is heaps of flavour in there.

Just like that ay? ;-)
Pure corn sugarhead is alright, you can definitely taste the corn but for me it got to be a bit sweet even with backset. The other grains in a BWKO help to give it a bit more character.
