Sorry don't listen to me ...I read the 1st recipe as 3-4 kg of malted wheat not 3/4 kg 8-}

I would still think you'd need more malt to convert all that grain though

Pretty sure wheat malt has a very low DP and can't help convert much :think:

I have some that has quite a high DP, pretty sure its higher than Malt Barley on average, the Wheat Malt is 240wk my Distillers Malt is 250wk. :think:

afaik wheat and barley malt are interchangeable in quantity, but you need to have a tight protocol to go under 20% malt in a mash.
I never go under 30% as I find 20% is a bit light on malt flavour.

**UPDATE**

The small amount I did get is fantastic! It was a bit funky at first, but after only 1 month on a mix of woods, it has turned into a complex sweet/sour whisky that is mint to sip on by itself. The unplanned lacto ferment at the beginning of this adventure was a happy surprise, as it shines through in the finished product. I only with I had more.
