Hi all,

I have some bananas, and I'm thinking about making brandy.
Is banana brandy any good?

They are certainly sweet enough! Id wait until they're nice and brown; guess you'd want to smash it up and make it quite moist!

There was a post here ages ago about Africans making a spirit from bananas, pretty sure they produce extra fores than normal fruit washes.

Would love to hear the results, freeze them before mashing to destroy the cell walls and get the most flavours/sugars out of them

Iv made it a few times 8-} not something yah drink everyday but is good occasionally. I wait until they start going black then put them in freezer. Then defrost and straight in fermenter, peel as well. I read somewhere there are enzymes in the peels that convert the sugars so the yeast can use them. Hit them with mixing drill, doesn't need much as they soft already. I used 2kg of sugar and ec1118. I used about 20kg of nanas.

If you let go over ripe the skin is going to make no difference .
Do bananas need extra acid added to make wine.

Thanks guys. I went with 6kg of bananas (weighed with skins on) added to fermenter (skins off) then 3kg of roasted corn and 1kg of roasted wheat. 25l of water, then sugar to 13 brix. Tbsp of sodium citrate, little bit of Epsom salts and a handful of raisins.

Pitched a US-05 starter.

Will update on progress

Checked for activity today. Slight fermentation (Ambient temp is 14c at the moment) but it looks like there were some weavels in my wheat. Looks like i'll have some extra protein in this batch

Temperature probably on the cold side to get extra flavor can you keep warm over night when the temperature drops.
