Bakers yeast for me.. Not sure how wine yeast will handle high gravity wash..

You know that wine is a high gravity wash, right. Wine yeast can easily push 12 to 15 percent.

No i didnt thats why i said not sure :laughing-rolling: only had very limited experience with fancy yeast strains only used safspirit american whiskey..

Just read the paper on it and it says is used for a very neutral ferment? Doesnt sound ideal for a spirit like rum where you want congeners and esters for max flavour :think: not sure always been happy with bakers so havent experimented. Baznkev is it ec-1118 you are using?

If ya want extra flavours just ferment above 30 degrees. Hit mid to high 30s and you'll be all set.That's usually the tipping point where my beer stops tasting like beer and starts tasting like a cross between bananas and apple cider.
Never done it with rum. Just a thought. :think:

Yes its EC1118 i am using and my temps are at mid to high 20,s , i have already run one run through on the strip run

I have tried several different Rum yeasts over the last 2 years, bakers yeast is by far my favourite. EC1118 can handle higher alc content, but the flavour profile is not great, you will get more off flavours than a lower alc content wash or less flavour from a standard wash, because EC1118 is a neutral yeast IMHO. :handgestures-thumbupleft:
