Himbeergist

Postby carcrash » Sun Nov 26, 2017 7:52 pm

A German "fire water" schnapps.
Five bags frozen raspberries.
Neutral spirt blended to 70% ABV
Put raspberries with enough spirit to cover and set aside for at least two weeks.
You will see the berries lose colour in that time.
Drain liquid and push pulp through a strainer fine enough to remove seeds.
Blend it all down to a 40% ABV
Then distill with a pot still.
It's a hard hitting schnapps "fire water" but the aroma and flavour is incredible.
Something different I hope you will try. I'd like to see this recipe make its way to tried and proven.

Sounds good but why re distill it? Why not just drink it after macerating on the berries like the "G dropper" recipe? I guess it would get the sweetness out, is that the idea?

Exactly right, to remove the sweetness and colour.
Cheers

Looks like frozen raspberries are about $8 a kilo at coles and Safeway in 1/2kg bags :handgestures-thumbupleft: might try this

You could maybe water it back to 30%ABV so there is less "burn" and may give you more ability of smelling/tasting the fruit.

I did read somewhere in that region where it comes from that the men drink theirs at 42% and water it down to 40% for the ladies, u may be watering the flavor down as well if u take it down to 30%

Had some spare neutral sitting there so thought I better get started on this. Bought 5 x 500g packs of frozen raspberries and put them into a 5l demijohn then added 2.5l of 70% neutral.

Just run this and ended up with 4l at 40%. Initial taste seems promising :handgestures-thumbupleft: will leave it a couple weeks to settle and taste it then :-B

Just a note for next time, maybe wrap the raspberries in a muslin bag when macerating  Might help to keep the pulp out.

Also, the OP doesn't mention how much neutral is used for the 5 bags of berries? I see Wobblyboot went with a litre per bag. Just wondering if this is the correct ratio?

The op said to cover the berries, 500 mls per 500g works fine for me and for wobbly as posted above (I'm guessing he used 500g bags)

I just tried some, it’s a lot smoother now with a nice raspberry flavor :handgestures-thumbupleft: more like a raspberry vodka (schnaps) than a liqueur. I kept a little too much and it louched, next time will stop a bit earlier :shifty:

Yep, took just over 2.5l to cover the 5 x 500gm bags. I got plenty of neutral just sitting there so I will try a blueberry and a strawberry soon :-B but next time I get the frozen ones from supermarket I think I will completely defrost them and refreeze again as they didn’t break down much, still looked same as when I put them in.

I tried this myself with good results. Very authentic to the German ones I have tasted. And yes, it is a schnapps not a liquor. Try a little twist by adding a bit of lime to the final product when served. What I found was a bit of the bitterness disappeared. I plan to contact family in Germany for more advice on how to imporve on this. I really like it! Thats Carcrash!
