Tea Infusions

Postby Carol » Sun Dec 08, 2019 8:31 am

I have been experimenting with infusing tea bags in 40% neutral ( usually 2 teabags to 300 ml spirit). Some are very nice - and some have been dismal failures. The flavours can be quite different in alcohol than in water.
Things that haven't worked are:
Chamomile ( as in Twinings Calm ( lime blossoms, mint and chamomile). The chamomile was very strong and overpowering.
Turmeric ( as in Red Seal Turmeric and Blood Orange). Also overpowering. However Higher Living Golden Turmeric was very pleasant.
Cassia ( Twining's Orange and Cinnamom lists Vietnamese Cinnamon in the ingredients - It is cassia not cinnamon). Cassia was overpowering but it will be good for steeping dried fruits for Christmas Cake)

Another unsuccessful version used Twinings Defence ( Orange, Ginger and Cinnamon). Initially it was quite pleasant. I made a batch for a friend to use for dried fruit for Xmas cakes but the flavour dissipated quickly and I had to add some orange essence ( baking section).

Cheers

Having posted the failures, here are the more successful attempts.

Twinings Lemon Twist

Twinings Strawberry Raspberry and Loganberry

Twinings Vitality ( Summer Berries and Mint with Green Tea)

Twinings Chai Vanilla

Twinings Lemon Orange Ginger

Red Seal Raspberry and Strawberry

Red Seal Super Fruits

Red Seal Blood Orange

Red Seal Lemon and Ginger

Red Seal Peach and Pineapple

Twinings Infusion - Watermelon Strawberry and Mint

Twinings Infusion Rose Lemonade

Twinings Infusion Bluberry Apple and Blackcurrant ( the Blackcurrant flavour is dominant - so like an alcoholic Ribena)

Twinings Infusion Passionfruit Mango and Blood Orange

And some others that have been pretty good.

Twinings Cranberry Pomegranate ( this is lovely colour - might use it to make pink gin one day)

Aldi Lemon Ginger

Twinings Raspberry and Peach

Higher Living Cocoa and Chili ( I have this put aside as a base for bitters)

Higher Living Golden Turmeric ( Beautiful bright yellow. Surprisingly good. Not overpowering like the Red Seal Turmeric and Blood Orange).

Celestial Seasonings Lemon Zinger

Healtheries Be Spicy

Red Seal Lemon Lime

Can adjust ingredients & method for simplicity.
