Easy Spiced Rum - TPW

Hi Guys
I have been making this spiced rum and everyone that tries it loves it and wants more so thought I would share it with you.

I use a TPW and make sure its filtered 3 times through the 20ltr filter.
Once your base is ready you will need

2.2 litres of alcohol base at 40% but I prefer 43%
Willards gold star Trinidad Rum Essence
Glass jug - 5ltr

Mix essence with base and put into sealable jug.
Add
9 pimento berries
3 segments of star anise
3 cardamom pods
1 vanilla bean - split- cut length ways
9 cloves
1/2 teaspoon of ground nutmeg
1 cinnamon stick
3 pieces of fresh ginger about the thickness and size of a 20 cent coin
a strip of orange peel- no pith - about an inch wide and 2 inches long

leave in jar for 72 hours shaking it once a day.
strain and enjoy.

A stronger mix that has better licorice taste

2.2 litres of 40% alcohol base
Willards Gold Star Trinidad Rum Essence
12 pimento berries
12 cloves
5 cardamom pods
1 vanilla bean - split lengthways
1 full star anise
1/2 teaspoon of ground nutmeg
1 cinnamon stick
3 pieces of fresh ginger size of a 50 cent coin
strip of orange peel 1 inch wide and 2 inches long

Once again leave for 4 days in the bottle shaking once a day
strain and enjoy.

This is a really nice drop guys especially if you like a spiced rum.

Thanks for your recipe mate. :handgestures-thumbupleft: We'll need a mod to move it to the recipe develop section though until others have had a go at it before it gets included in the tried and proven section.

Totally understand.
This recipe has been tried and tested on my mates for years so testing has been aok.
My mates are guinea pigs that aren't shy of telling me it tastes like shit though.
Give it a crack.
It is a good drop.
I call it Up Ya Kracken Spiced Rum!

going to make this on the weekend, but will be using coral sea essence, mixed with willards qld rum essence (5l total), as it is my go-to rum essence that I use..
chuck it in a keg and should be go by next weekend.

havent got a chance to make it yet.
having trouble sourcing some pimento berries.
everything else I can find locally at woolies

Pinmento berries are just Pinmento.
Can be bought at most spice shops.
This is what allspice is made from and are hard and round.

hi just re your pimento berries I to found them hard to find but if you buy a pickling mix( as in pickling for onions etc) in the dried herbs and spices section in woollies they are included in that . little hard berries I found it easier than driving around looking for them

Had 5L of woodchip flavoured rum sitting there with not alot to use it for so I decided to give it a crack. Pulled the pimento berries from a spice mix.

4 days later and fark me it's absolutely delicious!
