T.P.W. Recipes?

Postby Popcorn Jack » Wed Jun 27, 2012 12:58 pm

Been looking at a few recipes for tpw and I see a few variations.

Was hoping some of you could share your recipe.

I never did a tpw before and not to sure what to watch out for.
I understand that not using turbo yeast will give me more of a neutral.
some recipies do not recommend using bakers yeast. Champagne yeasts? These would raise the cost or perhaps a better alternative.
Lemon juice, must it be fresh, also some lemons have more juice than others.
I also see quality of the paste is important to. Being a chef I can understand that one, perhaps.
Also, do you clear these washes or just rack them to another fermenter.

Sorry for all the question, perhaps there is a link that could answer my question but I can't seem o find 1.

Stool be interested in your tpw recipes and experiences with them.

Much appreciated

I understand that not using turbo yeast will give me more of a neutral. Correct
some recipies do not recommend using bakers yeast. Champagne yeasts? These would raise the cost or perhaps a better alternative.I use Baker's yeast (Lowans), it works great
Lemon juice, must it be fresh, also some lemons have more juice than others. Not really, it's only for Ph purposes
I also see quality of the paste is important to. Being a chef I can understand that one, perhaps.I use the El Cheapo, no salt etc
Also, do you clear these washes or just rack them to another fermenter.Let it clear for a bit

25L bucket
5kg of plain no-name brand sugar ($2.89 per 3kg, dissolved in hot water)
50g of Lowans bakers yeast (safeway - red round container ~$4 for 280g)
50g of no-name tomato paste (mix it into the hot water)

put yeast in when its ~40degrees (a bit walmer then body temp, put your hand in to check!)

Stir the shit out of it put lid on bucket loose and come back in 2 weeks.

Good neutral spirit

Thats my way....

Bunnigs had a special on 25L black pails for $4.99, you can just put a bit of glad wrap over it not too tight.

Gday PJ

I saw there was a few variations also. I have just done my first TPW ( i am a turbo convert- doesnt take long on this site :-D ) i started with Mcstills version at the start of the TPW thread in tried and proven recipes as that was the first cab of the rank.. it worked no probs for me. but I will be mixing it up a bit and trying a few of the recipes just to see which works best - no point doing the same thing all the time.

Cheers

To true

I just hate wasting time but also like to mix it up as well.
Just want to make sure I got the basics covered and understand what ingredients do what.
I'm still learning my way around the forum. Just finding it a bit tricky to find a starter recipe.

Cheers
