Wash Ph levels?

What ph should a wash be at to keep yeast at its happiest? I drink rum and going to give whiskeys a crack to.

Would like to have some kind of influence over all aspects of the process that I can so that if I nail something I like I can get the process as exact to what I had as possible.

Aim for about 5.0.

I start at about 5.0 and by the 3rd or 4th gen I'm at about 3.2 - 3.5. I then skip the backset on the next batch to get pH up a bit, then start adding backset again.

On rums, I can't tell you what I run at. I throw everything in a big container and stand back. :laughing-rolling: I never check anything.
