Mate, if your getting hangovers, then your not making good cuts ;-)

Oops!

forgot to post this...

40-60g dried juniper berries depending on pref for lighter to heavier styles
4 almonds
3-5 strips of orange peel
3-5 strips of lemon peel
2 strips lime peel
3/4 teaspoon full of angelica root
3/4 teaspoon full of Orris root
1/2 star anise
1/2 teaspoon full of ground coriander
Cassia bark 1/2 a scroll or 1 teaspoon cinamon powder
3/4 teaspoon full of ground ginger
3 black pepper corns
1/4 teaspoon dill tips
3 whole cloves
6 grains of paradise

Options
1/2 green cardamon pod
1/4 teaspoon Lavender flowers
Rose petals
Banksia flowers

grind it up add to gin bag place or as close as you can get to neck of keg allowing vapour flow, run the TPW through, not forgetting you'll see a slight increase in abv due to gin bag effect, normal cuts. Let it air, use caution on watering it down as too low it loses its sole.

Law,

A full 45LT TPW in boiler...Infusion to vapour path on a normal spirit run for this method prefer the taste c/f to soaking in pure spirit...

Soaking allways seemed harsh to me not balanced...more a dance of competing flavours.

This is my gin recipe that I have been tinkering around with for a little while now
Its a bom saf knockoff, according to " the judges " around these parts its a good gin
I have only been making small batches of this, but its getting close to a BIG batch soon

30g Juniper berries
15g Coriander seed
2g Angelica root
2g Cassia bark
2g licorice root
.5 ml almond essence
2g grains of paradise
2g cubeb berries
0.2g lemon rind
0.2g orris root powder

put all in spice grinder and course grind everything
macerate in 1 litre of 45% abv neutral for 24 hrs, add 1 litre of 45% abv before adding to still pot
run through pot still
chuck out first 100 ml
collect all up to 81 deg C
using distilled water ( I used tap water 1st time and it went smoky ) dilute to 42% abv

I run it thru this

Where you guys getting your herbs and spices from?
I have been looking on ebay and there is a lot of options to go from, but is there a more obvious supplier?
Also are these herbs fresh or dried? or both?

Dear Mr Cooper
I seem to be able to get all the herbs etc from the health food shops here in OZ... you can use fresh where available...juniper berries should be available fresh in Japan also orange and lemon peel (no pith)...If you need grains of paradise craftbrewwer in Brisbane sometimes has them (Although black pepper is an adequate substitute)...also not in most recipes, but a great addition is schezwan pepper. hunting down the ingredients is half the fun.... best of luck.

Try Accolent herbs...fresh not old stock ...same vendor OD recommended to me.

Prompt delivery and helpfull. BTW don't try to import Orris root and Angelica root powders customs take a dim view of it.

They sell a wide range and specialize in herbs used by shamens, so if you want to make a gin with a little bit of a kick in the visuals department..

Or I generally go to the larger health food stores in chinatown especially the ones that sell manuka honey, add some of that for a health kick.

Recently watching a cooking show and they were using fresh juniper berries....
FRESH juniper berries here in Australia.

Has anyone here been able to find any?????

Cause I am told that they give a far superior flavour.

Cheers
