Wheetbix won't do any good over 90% wheat and by law Scottish made scotch must contain barley so that rules them out. And I have yet to find anything that states that an all grain must use malted barley.

As of 23 November 2009, the Scotch Whisky Regulations 2009 (SWR) define and regulate the production, labelling, packaging as well as the advertising of Scotch whisky in the United Kingdom. Scotch whisky must be;

Produced at a distillery in Scotland from water and malted barley (to which only whole grains of other cereals may be added) all of which have been'

But this is getting off topic.

You'll never get an AG Scotch taste from a breakfast cereal sugarhead wash... And you'd be doing well to get a non-malted AG wash to ferment.

Yes I found the Scotch Whisky Association page with the 2009 regulation pdf.so I stand corrected on my previous comment, and yes gone off topic abit. As Kimbo said he wasn't after any particular flavour I was attempting to tweak it to a scotch flavour,I don't have a local HBS so I'm limited to supermarkets for ingredients

I can't believe how smooth this is strait off the still. I am not even a whiskey drinker but this stuff is outstanding :obscene-drinkingdrunk:
I made it for the wife and just made her a drink from the still and she was impressed how smooth it was as well. :handgestures-thumbupleft:

i will be making this again.

Absolutely beautiful.
My first go at this NGW recipe & now after 6 months on Trad. toasted American oak dominoes I am blown away, awesome. On the rocks or with a little water added (I like a little quantity) ..... Sublime.

Hey zak how did you get on using a kg of malt in place of a kg of sugar? Have you tried it with and without the malt? Interested to hear your thoughts.

How do you guys test for ph level and how important is it to know what the ph is?

Dunno...never refluxed it. My Best results came from either potstilling it or running it thru 4 plates on the bubbler.
Reflux stills just scrub out too much flavour.......you'd get a very nice Vodka tho 8-}


Bit of a newbie question - so when you run on a 4 plate bubbler you don't want to reflux at all? Just let rip?

Im sure this question has been asked a few times but buggered if I can find it. I have a NGW going and its down to .995. Airlock is still bubbling away at 1 bubble every 10 sec though. Is it ok to run it early?? I wont be able to run it for 2 weeks if I dont get it done tonight. Being the impatient bastard I am just wanting to know. If I gotta wait I gotta wait

Run it if it is down to 995.
You are mostly seeing the CO2 held in suspension now escaping
Letting it ferment any longer will add very little to the potential alcohol content or flavour

Hey guys a newbie question I have put down my first NGW and will be ready to run on the weekend through my 2" pot still. Is it rule of thumb to always do a strip run or can I just do a spirit run straight up at a slow rate?

It will be rough with a single pass and yield will be low.

Best to strip a few batches then one big spirit run for a better product and more of it for less work :handgestures-thumbupleft:

Ran my 4th gen NGW through the bubbler this afternoon. Tastes great but low abv and not as much product as usual. Something amiss with the wash?
