Just gone through the whole thread again and can't find a real answer to generations for this recipie. As it's my first attempt away from a tpw, some questions please.
Should I be adding more yeast? I think other recipes don't require more on gen 2 but what about this one?
I used 2 big boxes for the first wash and have about 5-6L of grain bed, thinking this might be enough?
Use of hot Dunder? Someone mentioned 10L or so, would this help or hinder?
Cheers

i wouldnt use more yeast unless it doesnt take off after a couple of hours which means the yeast may have died
grain bed i saw you add 1 more box of nutrigrain and take out the same amount of spent grain (this may be on next ferment, removing grain that is). Ive reused weetbix brain bed without adding any as i used to much once and when the ferment finished it was half the bed when it started.
i would add backset which is more important from what i read than the yeast? may be wrong but it adds character (yet to do flavor myself). the amount i would use might be 4L for 25L wash, or 3.5 maybe. i think to much may raise ph?

Thanks WTD, will try 4l and no yeast for this one. Cheers :handgestures-thumbupleft:

This is gleaned from 14 gens and 4 sub gens
Wear appropriate PPE this stuff is hot and will stick your bromidrosis to your jandle when you trip on that bit you have been meaning to move
Use the hot backset to melt the sugars and wheat things and Epsom or whatever. preferably in a BOP
Only use enough backset to make a thin porridge.
Mix with paint stirrer in battery drill if you got one
If you use too much you will get a ph problem
Use good water
Keep your grain bed happy after racking by giving it a few litres of water
here you decide whether you kill the yeast with the hot backset and repitch or add top up water first then slowly add your bop to it
I have done both but not by design.
When the grain bed depth disturbs you, halve it, (before giving it the drink) about every 3rd gen
Reduce the amount of wheaty things a bit after gen 3
if you must have a percentage or fixed amount after that recipe then follow it and record your results

Dunder will lower PH, too much and it will inhibit the yeast :handgestures-thumbupleft:

Having trouble with gen 2. Looks like it's stalled or like you said Sam,
Something has inhibited the yeast.
Gen 1 was as per kimbos recipe with 2 big bags of nutrigrain. Ran out to .990 as expected.
Gen 2 I stuffed up and added 4L or so of Dunder that was too hot. Left it for a day and yes, no action, have killed the yeast. So I rehydrated 80g of yeast, now I have no idea if I did that right 8-} , all I did was add 80g of yeast to a litre or so of warm, 30 degree, water. It went to a horrible sticky paste at first but with storing etc all "dissolved" nicely.
So I added this to the wash
Bubbled away nicely for a few days then slowed and stopped/ cleared.
I thought it was done so went to strip it but when syphoning I got half a mouthful and it was sweet, :angry-banghead: checked the SG and it was only 1020-1030 or so. :angry-banghead:
So, without a ph tester, should I be:
A) adding something to bring up the ph
B) adding more yeast
C) have another scotch
D) c and a or b combined?

Cheers, I've for C pretty well sorted for the minute but what do I add and how much?
A quick search of the threads tells me to add soda ash??? Or bi carb soda( have that one in the cupboard)
So can if bicarb is ok, how much to add or should I be buying a ph tester first?

Bicarb will work but better using calcium carbonate, just start with a little maybe a teaspoon of two will be hard without a ph tester. pH isn't linear so when it goes it may go high real fast.

Other option is to strip what you have cut your losses and start the next gen :handgestures-thumbupleft:

You wont regret getting a ph meter :handgestures-thumbupleft:
I use mine every wash.
I used calcium carbonate on a rum wash once ended putting in about a cup and it stayed at about 4.8 from 4.5 :angry-banghead:

Cheers guys :handgestures-thumbupleft:
What type of ph meter do you have? Jaycar have one but it's $90 or so.
Found this one from bunnings, might do the job?

Also tried to find calcium carbonate without much luck,
Where do you buy yours from up here Rum?

Got my ph tester today, I kept a jar of the failed wash and it tests with a ph of 3, could this be why it stalled on me?

Put my first 50L of this recipe down today ...
Unfortunately I read the recipe wrong before going to the shop and only bought 2x 800gm boxes of NG.
So for each 25L I went with
800gm Nutri Grain
12 X weetbix
5kg raw sugar
Tsp of dap and mag
1/2 tsp citric
Had about half a tin of Lowans left so rehydrated that and chucked it in and it is bubbling away goodo.
Can't wait to try this on some American oak!

OK, found dap (DAP: Diammonium Phosphate. An ingredient used as a yeast nutrient (source of nitrogen and phosphorous.) in the glossary. Can I, therefore, guess that mag is something similar but with magnesium?!?
