Do you let the back set cool and if so how much of the 25L is backset?

Do you add yeast on the concurrent gens?

I just tossed my first gen weetbix and nutrigrain because I didn't know and didn't have the time to ask.

Hot backset is good mate. Straight out of the boiler it helps to dissolve the sugar :handgestures-thumbupleft:

Use the backset hot to dissolve sugar then let it cool. Do it this way and you won't need to add new yeast.

I just thought the high temp of the back set would kill the yeast?

So add about 25% back set, stir to dissolved sugar, let this cool and add back to fermenter topped up to fermenter Max.

Guys, I’m at a point where I’ve got 2 first gen washes that have finished fermentation, I was planning on making a second gen straight away however my problem - the local supermarket has no sugar due to panic shoppers :angry-banghead:
What do i do to preserve the yeast / nutrigrain mix at the bottom of my fermenters until I can get more sugar??

Just leave the lid on it, I’ve often left my lees sitting for a few weeks before getting around to putting another gen on.

This stuff is awesome. Did 3 generations, the striping run went in @ 50%, first 5L come out at 82% second 5L at about 78%. I let the second 5L run into the tails a bit, its now on oak. The first 5L wow, not sure what Im gonna do with it, its great just as sipping White Dog moonshine, tastes a lot like a sweet corn whiskey. Well impressed.

I hope you meant that the stripping run went into the boiler at 40%. (I assume that was a typo). If not, you have the potential for disaster. 40% low wines is considered the upper safe limit for alcohol content in a boiler.

No dramas VirtualT. Just thought I’d point it out. If you are aware of what you are doing and decide to continue taking those chances, that’s entirely up to you. This forum promotes safety at all times and no one wants to see or hear about anyone being hurt through their actions. The other issue I have is that this is a public forum where people learn and pick up valuable information about this hobby. Pushing the envelope in relation to safety is not a good message to put out. It gives the impression that we are just a bunch of cowboys.

Thought I would interrupt this thread to give some feedback on my first NGW run.
I am using a thumper with a 10L still so ran 23 litres in 2 stripping batches.
I added juice of 2 lemons and heaped teaspoon of epsom salts - the SG was 1.094 and ended at 1.010
Havent done a spirit run but I tasted the middle of the run (diluted to 40%) and wasnt too bad. Had a candy flavor aftertaste.
I wasnt sure when to finish, but have around 4 litres at around 75%
I am doing generations, using the lees and backset - I assume the yeast will have died due to high alcohol content and so need to add the same amount of yeast again?

Beermerc, if you happen to catch this - you dont need the thumper for stripping runs - it actually works against you by stripping more flavour out of the wash and the higher abv leads to watering down the flavour more with water or wash for the spirit run, save it for the spirit run when the additional processing it provides makes your cuts a bit better

With china knocking back aussie grain you would think there would be a surplus :roll:
