Howdy,
keen to hear from anyone who has had a good crack at using cherry timber for ageing.
I'm kinda taken by the reported deep red colours and softer flavours it develops.
So pick a bunch (another bad pun and I had to think about this one...lol) of lines to write and throw back in this post please.

What the fuck is cherry timber?
Is it used commercially?
What actual type of wood is it derived from?

It's as it says, cherry tree timber.
There's few posts else where mainly US where ppl have used it and reckon it's good. I'd like to get a local opinion before I go attack a cherry tree for a few slices.

This lot is ticking along rather nicely.
straight corn/malted rye tasting rather fine but it's way too young yet.
Might pay to slip a orchard owner a 1lt in exchange for some off cuts.

Hello all,
Have finally found a supplier for American Cherry timber I'm happy to say...Otto's @ Magill Rd. Nice strip 2m x 35mm x 20mm = $10.
So if your chasing that deep red colour, sick of the routine oak brown and a softer timber profile grab some and give it a crack.

Ottos are great guys and really know wood. I'm keen to try cherry - are you charring? Toasting ? Sherry soaking ? All of the above?

bb,
early days so haven't got it down pat ...been on orchard sourced off cuts for a few months only...
But...
10cm x 2cm x 1cm strips light charred and one natural works well.
yet to try the three toasted types ...
