I got low carb beer enzyme (Amylase) from Beerbelly in Adelaide 28 bucks for 500ml obviously its on liquid form I have not used it yet.
I have used bread improver before with good results but I also use 1.5-2kg of barley every time I make sochu so you get both Aphla and beta enzymes.

Anybody else tried the Yellow label Angel Yeast?
I'm on my second run of it. First turned out great. This time scaled up to 100L. It has been bubbled away pretty aggressively for over a week now. I'm thinking I'll have to let it go for a month or so just so it can settle out a hella lot before I try racking it off.
The smell reminds me of glue. Not unpleasant though.

If after enzyme found this web site that has listed but looks like have to buy about 20 litre size and that's going to do a couple of tons of rice.

Has anyone tried recreating this? I saw someone on here a few months back trying it with yellow label Angel yeast.
I was flicking through the tube last night and noticed that Kiwi doofus Still-It had done it with, cold, cooked and hot rice with varying results.
I'm just so curious of the taste outcome and how it would be drank?
