trying a Idea for a Jack Daniels clone . l Know its a corn / Rye / Barley bourbon . wiki Says its Charcol filtered with maple timber . . Was looking at attacking this 2 different way's

1) use MM bourbon , then filter with Jack Daniel smoking pellets then age on alligator oak domino's ( I can't find Sugar Maple timber to char)

2)use mm bourbon , then Use Jack Daniel chips from LHBS ...

Thoughts Any 1?

It used to be my fave commercial...was that is

I can get close but two things avoid me..

the ageing time.. mine is only 2yo

and the timber charcoal filtering... have tried charcoal packed into a 2" piece of copper with slow drip feed...it ain't bad but it's not JD.

The barrel charring you can replicate no issues with chips or charring, the former 2 are little harder

JD are prepared to leave more heads in and let time do it's work ..that's a trade off I no longer consider valid.

Good luck...just enjoy the play time cos it is fun no doubt.

I made up 700ml of 40% mountain moonshine thats been aging and added 10ml of maple syrup ........ YUM .... think im going to add it to every bourbon now ,,,

I hate to say this but i think i have to start blending 1 jar from the heads to give it a bit more bite ,,, its just too smooth.

Go the bwko recipe cuz. Corn, pale malt, pale wheat, avoid rye its not worth the extra time ageing....
Age on bourbon chips hearts only no heads or tails.
It ain't jd its better......

I find Jack Daniels brings up a chrome surface really well. Soft rag and a glass of Jacks and yr mags shine like a FSD column.
Fucked if i'd drink the shit though.

The recipe is 80% corn, 12% rye and 8% barley (6row) 25% backset, I add 30ml of pure maple syrup per litre after peaking it out, very very close to the real deal.

I forgot, the calculus, my bad. Ok so here's what ya do, to get the grain required. Divide the total volume required by 4, that will give you the total grain required in kilos. Then get your percentages (80% corn) times by the total required divided by 100 equals amount of corn required. Eg a 60 litre total volume divided by 4 = 15 kg of grain required, 80% X 15/100= 12 kg corn, do the same for all 3 grains. Adjust the ph to 4.5. It should be stilled with a thumper, and collect hearts from 75-55.
I soften the water with gypsum, good water is kinda important, that amount of gypsum is going to differ depending on your water quality in your area.
If you can't get 6 row barley, use the good old 2 row and "beano", beano can be bought on eBay, we don't have it here in aust, unfortunately,
But that's it, it's a lot of work mashing the grains and getting the balances right, but it's so close to the real deal its not funny, it's just a LOT smoother that's it's give away.
