Another Corn Based Whiskey Recipe Idea

Hi everyone,

I have an idea for a recipe I want to try.

54 Litre Wash

6kgs Cracked Corn (superfine like Corn Meal texture)
3kgs Malted Rye (cracked superfine)
1.5kg Malted Barley
3kg Sugar

Same methods to prepare wash as per Macstill's version of UJSM.

Wondering if any of you have tried similar grains to this in a variation of UJSM and also would this be ok with one strip run then a spirit run or would it benifit from multiple stripping runs like UJSM to sour it then age on oak?

Will be getting the ingredients for this within the next fortnight.

Looks the same as this to me. (Traditional Appalachian (U.S.) sweet mash corn whiskey) viewtopic.php?f=32&t=3413
if you are going to the expense of all that malt why use the sugar?

Hi Waza, year that's the one. It said only to use sugar in summer.

Do I strip it then spirit run or do generations?

Is there any real advantage to getting it all cracked fine rather than course?

I would just run it once through that coming soon bubbler, I dont think that there is any advantage in the super fine grind, but Im no expert here.

Hey Walker did you source that rye locally, Im finding it a bit difficult to find rye meal, doesnt have to be malted rye.

Howdy,

Nice grain bill but no work practices...like r u going to do the two rests for Beta and Alpha...if not it's just grain for flavours...reduce grain load and increase productive wash volume.

Overly fine and you get a plug sitting in the fermenter it does little as a solid block. For flavours needs to be so wash can get in.

Plain Rye is dead avg in terms of flavours...malted is the way to go if you can get it...otherwise simplify your grain bill.

Sugar is good for yield...why not ...un mashed grain adds little so you going to need it.

Yeah MArks HB was.............an experience last week. Think I'll just get the grain bill for Mac's version of UJSM and give it a go with the pot still condenser.

+1on what bt1 said.
If you are doing it as per Mac's recipe, thats just a sugar wash.
So you will need about 10kgs of sugar.
If you are relying on the grains for sugar then that recipe wont work, you will have to do the full saccrification mash thing ;-)
