Guys we make a very similar spirit which we are putting on the market in a month or so... I believe we have nailed the style of Jamaican spiced Rum...this is how we do it...firstly age your rum on charred (medium) french oak (EX CHARDONNAY ) but any good oak would do after about a year you will have a light brown Trinidad style Anejo rum...we then place the rum in a vacuum chamber with Vanilla beans, star anise, orange peel, cloves, cassia and raisins...bring to a complete vacuum and immerse in a Sous-Vide bath with vacuum infused sweet sherry French oak for 24 hours at 60* C. The resulting spirit will be a rich mahogany colour, sweet and will have a high glycerol content. You never need caramel...we do not even own a bottle....
WHY A VACUUM
A vacuum will enable the liquid to boil at room temperature, this is vastly different to boiling at high temperature in terms of enabling a very active extraction without the burning and caramelisation which occurs if you treat rum at high temps... The sous vide provides a safe way of maintaining a soft boil and extraction.
When you are finished the extract liqour can be back blended with the starting rum to create anything from a light Trinidad Anejo to a full blown Jamaican spiced.
Cheers
Doc

this is a good point. Im into my astronomy and one thing i learned is liquid will boil in the vacuum of space, which is what happens to our bodies too

I've seen recipes that use the dunder from the boiler to make a rum essence for the dark rum. It was the one I used for my mum. She'll have it at the end of this month for her verdict as we're in the middle of a move. I don't like rum, I think I've said before a coupla times, but the dark rum I made with the essence was black as night and smells absolutely spectacular! Better than any Bundy. Smells sweet and chocolaty.
Have you considered using the dunder as a base to darken the kraken rum then add flavour as needed?

Rush006 how'd you get on with imitating the great Ron Zacapa rum?
It's a favourite of my grandfather's and I'd love to have a crack at brewing some up for him for Christmas!
Not even close but i enjoy what i make just as much. :D

I'd say he's taken the picture sideways which is why it ends up that way (as in 'Landscape')... That's what happens on most forums...

I'll just flip the photo next time to the right before I post. This wont defeat me.
Regardless of the orientation you can see the rum is jet black and it smells like a sweet chocolatey dream. You know those sort of smells you go back to just to smell it again. Like fresh coriander or mint. It's like that. Bottle is a small, clear, approximately 40 mm across the sides spare 200 ml port bottle I had lying around. Flavor is probably not there as it is in a bottle of Kraken but I don't want to waste my money on a bottle of something I'll probably not like just to compare it.
If its a winner though I'll probably try to make some more with the rum feints I have left over.

Gday - just wondering if anyone has used dark belgian candy sugar/syrup in this clone or in any dark rums at all? It might add an interesting edge?

If anyone is still interested in a Kraken “look-a-like”, I tried the Still Spirits Top Shelf (Sea Beast) essence and it was awesome :handgestures-thumbupleft:
I’m new to the hobby however highly recommend this for a easy solution whilst someone creates another version!
Cheers
