how do you like the Black Maximus pot still Matt?

I looked at them but thought the condenser was a bit short.

Not sure why I thought that, as I know very little about these things, but most pots I see have a condenser of 600mm or more.

Well i'm pretty new to it so i don't have a lot of experience with anything else. But you're right, the condenser is a little weak when stripping at full 2000w.
Seems to be fine using power control for spirit runs.

I've been toying with the idea of building a larger condenser just for stripping. Would be nice to not have to freezer cuts to be able to get an accurate reading from the alcometer while stripping too. They come off piping hot still running flat out water.

I'm just pulling the last of the tails off now at around 86C

Man, do i need a beer!
Luckily, I've a rather large portion available, haven't got any room for f*cken bedsheets though :laughing-rolling:

Stopped collecting at 95C/50% Could've gone longer for feints, but frankly i was over it :laughing-rolling:

Looking forward to getting on my freshly toasted american oak tomorrow after choosing cuts.

Zac and all,

I have 45L of Gen 2 CFW in my fermenter, I turned the heater off today as it is done. I was hoping to run it through the pot tomorrow or wednesday, but family biz has thwarted this plan.

I fly away fishing for 2 weeks on Thursday, will it keep for this period of time in the fermenter or should I rack it and cold crush it in the fridge.

The fermenter lid is glad wrap and an elastic band, a bit of the CO2 cap would have been lost when I removed the aquarium heater today, but i don't think enough air got in to contaminate it.

My gut instinct is to leave it in the fermenter, but I don't want tt get back from my barra slaying trip to find a stinking whiskey wort.

I'd be happy enough leaving it in the fermenter, just make sure the seal is good.

It'll go nice and clear with a couple of weeks to settle :handgestures-thumbupleft:

I've packed a few bottles of macrum and barring any altercations with cape york crocs i will post a pick or two, hopefully metre plus!

As long as it ain't infected you'll be good to go :handgestures-thumbupleft:

You shouldn't have an infection on your return but just thought I'd mention it.

I've left washes for 8+ months and still had good gear to run.. Stress less :teasing-tease:

Beer yeast is fine but it's more expensive ;-)

Doc says Danstar Nottingham is a good yeast for whiskey, it's a bit of a monster for fast fermenting too so watch for a big cap/krausen

Put 25l version down last night! Was about 40.c when I finished, had to let it cool over night.
Put the yeast in this morning at 28.c hopefully it'll be bubbling away when I get home tonight!

my gen 2 is sooo slow, been fermenting for close to 2 weeks.
used 15 litres of dunder/backset (whats the difference??), 6kg of sugar in a 40 litre wash.
a lot more sugar than i normally use, thought it was worth a try to get wash % up and thus stripping run %, but its quicker to run a bit less sugar and I might chuck a couple of scourers in the pot still column n the spirit run instead.

6kg of sugar in 40 L is alright, I would use about 8L of backset instead of 15 though... I only use 10L in a 50L wash.

Your ph is probably all up the shit.

No point putting scrubbers in a pot...

There is no shortcuts to quality!

i checked pH at the start and added bicarb to get it up to 5. suspect my pH meter is being dickey though, its currently at 4.5 or so.
2 days ago I racked off a green ginger wine I am making from grape juice, SN9 champagne yeast, figured what the hell and chucked the yeast puck into the CFW, seems to have sped it up some, its down to 1.03 now and tasting fairly dry.

re: packers in pot column, you don't think it will add just a little reflux and bring the % up slightly ?
surely if the top of the packers are cooler than the bottom, it should be evaporating off at a higher percentage than that entering the packing ?

Generally, no. The whole column, including stainless scrubbers, will get up to temp and normally would get zero reflux :naughty:

yeh true, no real temperature gradient like i get with the reflux column.

my good ole mum donated me a stainless crockpot, 7 or 9 litres, might have to get a thumper built.
dunno, I am hooked on the flow rate of the pot head, I run the feints through the reflux and can use them to moderate flavour if i want.

love the taste of just the stripped run so far anyway, looking forward to the second run of this.

You have 2l of corn flakes written in the recipe does that mean 2l of the porridge like stuff and if so how many kg of cornflakes did you add to the 10 litres of water to obtain the 2 l of porridge stuff
