No experience here yet mate, but everything I have read suggests 6 to 7 and it goes a bit south.

Personally, I am going to be freezing some backset from gen 3 so that any future ventures start at gen 4. All the opinions i have read seem to suggest that's where the real flavour takes off.

I believe it’s the acidity goes south!

The more gens you have, the more the acidity increases.... after 7 gens it’s almost too much. Based on the cost of this recipe it’s not worth fighting it - that doesn’t mean it can’t be done!

With my ujssm washes I'm up to gen 12 since upgrading to 200 litre washes and I'm doing a spirit run this weekend coming. I started with 50 litre ferments then stepped up to 200 litre ferments at gen 4 of the 50 litre washes. So really my yeast is at gen 16 i suppose. Every 3rd gen I skip the backset to keep the pH in an acceptable range. I don't own a pH meter, if the ferment is slower than normal in the next gen I skip the backset, not rocket surgery really.

I'm just getting back into distilling after a couple of years. I'm starting again with this recipe. I'm just a bit unsure of how to do the generations, so I will run this fast through the pot and I keep the stuff in the bottom of the fermentator and just top it back up with water and sugar but no yeast?

Also with the remaining stuff in the boiler after I've run it down to 20% do I keep that or just chuck it?

I've always just thrown everything out and started from scratch in the past.

Your on the right track. Have a read of the recipe on the first page and most of those questions will be answered. No need to add anymore yeast, you'll need some of the backset/dundar (stuff left in boiler after run) for the next run. If your still unsure ask again and we'll help out.

Anyone keeping backset so they do not have to start from scratch.

Was in woolies yesterday and they had 920g packs of cornklakes for $5 and 1.2kg weetbix for $5. So go raid woolies and stock up :handgestures-thumbupleft:

Quick question, to get something to drink from this batch would it be acceptable to water down the low wines at least so i have about 20 litres i the boiler and do a spirit run. I also have a few litres of fores and tails from previous wbab brews could i mix that in for a spririt run?

By fores I assume you mean heads(i wouldnt recycle fores) yes add your feints (heads/tails) and water. Remember to make sure there is enough fluid to cover element at end of run..not just at start.

You'll be right. Like bluc said don't re-use fores just heads and tails. Wbab wash is similar in taste so shouldn't make much difference. I would be a little careful if you only had say 2ltrs of low wines as you may loose some flavour by watering down that much? It won't hurt you but may reduce some of the flavour that's all.

Yeah cool, I'm hoping to get 6 litres of lw on this run then mix in the old stuff and water it down, should be a good 20 litres in the boiler for the sr.

In the past if I had to run a low amount of low wines, like less than 20 litres, I add enough water to cover my element, which is about 10 litres then add my low wines then add another 5 litres of water. That way I know I won't expose my element during the spirit run. Now that my aging stock is up a bit I don't do small spirit runs any more I do 40-45 litres @ 40% now.
