Apart from having to reconstitute it would a dme be suitable instead of the "Caramalt"
and if so which ones would be ok to use ?

Caramalts are the same as crystal malts. They are a lot sweeter than dme and are usually added to dme to get a fuller beer.

I couldnt decide to do this or bwko so i did both :handgestures-thumbupleft: anyway wondering what is caramalt is is it barley? I read that all barley mash is scotch is that right or is this a type of whiskey? :think:

Just put my first wash down this afternoon and it is frothing up nicely at the moment. Can't wait until it is finished fermenting :).

Suprised how sweet this is straight off the still jury is still out with other thoughts gunna get tis on some french oak

I over came the sweetness by using US05 and/or a liquid beer yeast, also added about 100gm of distillers peated malt and the results are amazing, everyone loves it.

First lot i did bubbled steady for 10 days I put the second lot on last wed and when i checked this arvo it does not seem to be bubbling. Has been stinkin hot here could it be finished already?

Does anyone know what the f.g should be on this mash?

Appears im not the only one with fast ferment zaximus page back also had his finish in 3 days so run it in couple days :handgestures-thumbupleft:

Not quite 3 days I put mine on Monday night and stopped bubbling last night, it had been slowing down all day yesterday :). Now the big question is do I do a spirit run in my pot still right out or strip it and put down another wash or two and then do a spirit run?

I forgot to add the SG is 990 as of this afternoon :).

I always strip then spirit run gives higher proof and a more refined product :handgestures-thumbupleft: can do a small single wash spirit run or save up low wines and do a bigger spirit run totally up to you

At the moment it smells just like beer, smells very good actually :)
I will be running it tomorrow :), it will be a strip run :). Then I will go out and get more supplies to do a gen 2, 50 lt wash then strip that and combine the strip runs and do a spirit run. :handgestures-thumbupleft:

Yes just keep adding grain, LCM and sugar on to the yeast cake and removing some of the spent grains.I am going to do that for 3 gens should be enough low wines then to do a spirit run.

This sounds really good.
My plan is a single run over 4 plates & age it for a month with 10g/lt American oak.
This is only a hearts cut right. No one is adding any heads or tails back into this one are they.
I would assume not from the quick aging & drinking.
