We drank this side by side with Baileys last christmas. There was a slight difference in colour and flavour and most people though the home made was the best :handgestures-thumbupleft:

So does this make 2 litres or only a bit. To make 2 litres do I add double of everything or triple or so on.

When you make it you will probably want to adjust the recipe to suit your taste... I added a bit more cream, another egg and a dash more chocolate topping. Just taste it as you go and you'll work out what it needs :)

Reduced cream and added 100ml Glucose

This stuff is probably better off made at the last minute, with raw egg, cream etc involved... I may be wrong though? It's not hard to knock a batch up as needed though :handgestures-thumbupleft:

i checked up on that last Christmas. it will last a very long time due to the alcohol content, similar to eggnog (which some recipes say to make 6 weeks before serving)

yeah, in the fridge it can last for months, but rarely lasts for days.

I'd love to get a definitive answer on how long this keeps.
Last year it didn't last a week around Christmas and I'm assuming this Christmas it'll go as quick, but in case is doesn't and I lose track of the age of the stuff

Can't help there tips...

I just go on taste. Found the long term stuff starts to separate a bit and it tastes flat to me after a while like it loses that distinctive fresh creamy appeal and then it's just thick which is ok but yeh flat. I reckon Baileys is like that when it's be opened for while.

I use my grandma's old recipe, which is somewhat similar to this recipe, Gran always said it lasted 6 weeks in the fridge. But as I said, it never lasted that long.

I have some in my fridge which my cousin gave SWMBO 3 weeks ago and I had a sneaky sampler last night. it looked great and tasted so too.

I don't think you'll get a definitive answer, as BT1 says - use your senses and if it looks suss and smells suss throw it out.

If you plan to make some as gifts, as I would tell them to shake it well before drinking and to drink within 28 days (just to be on the safe side). Let's face it, if you can't knock over a bottle of this stuff in 28 days over Christmas you are a borderline teetotaller.
