Rolf and few ppl been asking about Gins. Other than an Irish’s it my fave and I’ve spent a fair bit of time on em to get comfortable with a Gin selection that goes done well on a hot day.

It’s not a Gin – Genever’s
Well if you’re a whisky or rum drink a Genever is a good place to start. It’s originally a Dutch invented drink but the wash is rye, corn and wheat. It’s a straight up UJSM variation mixed in small amounts with a neutral/ Gin botanicals.

Any half serious Gin drinker usually has several to choose from…it’s a mood/weather thing..

Reckon you need at least 2 Moderns , 1 traditional, the Bombay clone London/Dry type in tried and true and a Sloe Gin to get into the swing of things.

Drinking it….

Slushies
Just get a few ice cube trays, and juice citrus and fruits you like into tray freeze, into small snap lock bags and use about 4 cubes in plain ice to make the slushy…
Lemon, Lime, orange, blueberry is good, grapefruit, peach, pears etc etc

Mixers
Tonic naturally, soda, bitters = pink gins= nice, fruit purees/juices/ cold tea infusions like cranberry/grapefruit

I got about 10 or so faves but rather than me rave on just go here…

As Mainly a Bourbon Drinker (Rum More recently along with some scotch) I have never been able to get into Gin. I find the smell overpowering and I hate tonic water.
Would Genever's be a good place to start ?

I would never eat chilli up until a few years ago
Now I smash down 2 or 3 in food everyday. even ate a Scorpion once :scared-eek:

I'm not a big tonic fan either. Starting drinking it with soda and then adding lime, lemon or cucumber (use something that is prevalent in the gin). I know it's not very manly but it tastes bloody good especially on a hot day.

I started drinking gin and soda because I was travelling a lot with work and we'd always go out for drinks afterwards. After drinking a lot of beer and either rum or bourbon with mixers, I started packing on the weight and the misses "had a word" with me :) I liked gin before, but now I'm obsessed.

Hadn't actually posted it so here's a 'rough" guide and a few comments.. it's a work in progress and needs quantity's to be defined etc

I'll be doing another over the break so will measure it out.

Start with the core trilogy of gins for 45lt wash, through a 5 plate bubbler, gin caddy/hop balls in the upward path...has to be a clean gin this one
Juniper 50gm crushed
Orris root 1 heaped teaspoon
Angelica root 1 heaped teaspoon

3 -5 strips of lemon peel & orange peel
1/2 teaspoon of each
Yarrow
Elderflower
Chamomile

Caraway
Corriander
Cubeb berries

Run wash, split off 2 x 500ml jars of hearts @85+ % abv
1st jar 2 x med sized Lebanese cucumbers peeled and finely sliced
2nd jar 4 -6 rose flowers minus anything that moves by itself, diced and covered in hearts... crush it down a bit

A week later(infusion time for 2 jars) it's a case of blending the three parts, main Gin(post cuts), rose and cucumber extracts. Go to a good pub order a Hendrick's on ice drink, smell and really picture it. Then go home and blend the three until your happy.

Notes
Valencia oranges(navels got little taste grunt) Balancing act here would like to increase citrus peels but a little concerned about cloudy/suspended oils in the final product. it could be masked with a dark spirit bottle... Not quit a louche issue but need more experimenting here.

Found health food stores sell herbal teas for Elderflower and chamomile small quantity needs while testing.

Rose influence will fade over time be brave on initial blending.
The cucumber I would add progressively over time cos there's a risk it can cloud the gin but you need the taste. Bit of trail and error here.

It's not a complicated gin just needs better quantification Mech which is still underway.

btw may need to hunt down some herbs, in addition to Austral herbs try herbies.com.au for cubeb etc

Have the Elderflower growing but flowers seem to have little taste does get the berries .

Has anyone tried Salad Burnet for the cucumber flavour? Its aan old fashioned herb with a cuke smell and flavour -could go into the botanicals basket, save doing the masceration...just an idea.

equipment: Eve - 4" x 4 plate solid state bubbler (sieve plates), 330 mm packed section on a keg boiler with 2 x 2000 W elements.
Currently having a makeover: 2" x 4 plate solid state bubbler (1" bubble caps, no sight glasses...maybe not for much longer!) on a bain-marie boiler.
