Cant be sure what's going on there, but I'll bet it just needs time

What ABV did the spirit run come over at?

What ABV are you oaking at?

You should definitely be able to taste the corn :?

It came off @ About 80% i think,
i then watered it down to 65%

Sounds perfect, just give it some time ;)

Mix yourself up a drink with coke and let us know the taste, a lot of the bourbon flavor comes from the oak but it should taste of corn likker now.

It tastes like Oaked Neutral, no corn flavour at all.
i might try and sour some corn for my own curiosity, (i think maybe there were preservatives in the corn)
i can always ditch it if i dont want to use it!

What was your grain bill?

Did you use cracked corn from a stock feed joint?

i have a sneaking suspicion that my cracked corn wont sour! (due to preservatives)
I've got it soaking in water sinse last Wednesday, and it is only fizzing a little bit, and no cap.
i have just put it out in the sun to warm up a bit and see how it goes. ;)

Failing that, if the corn does have preservatives in it, would a mild acid solution help it sour?

I believe i have seen that promoted somewhere.

Ujsm does it eventually by itself though.

I think if it's got preservatives in it you might as well use it for chook food, this souring thing doesnt make sense to me, you get the sour in sour mash from adding backset through a number of generations and the corn sours in the wash anyway.

I siphoned some wash into the boiler this afternoon and got a mouthful of wash, mine isn't "sour" it tastes alright when it comes out of the still though :P
