yeast, eg: for a 25ltr batch = 80gms (X3 = 240gms).
Is this correct that I just need a little less yeast or is it not going to effect anything multiplying all X3?

All good, the yeast will naturally multiply so you only need to add the same amount as for a 25L wash 8-}
This is what I've done for my first wash which is almost done, it's only been 4 days and SG is almost at .990
Started 10ltrs of hot tap water to dissolve, all water ran through filter.
25.5ltr wash after adding a little cooler water
5kg Sugar
200 grams leggo's tomato paste.
1/2 tea spoon citric acid – caused the pH to fall to far – then added about 1.5 teaspoons of Calcium Carbonate to increase the pH
80grams baker’s yeast
Pitched yeast at 35.3dg > pH 5.1 > SG 1.075
I've got a big 100ltr SS fermenter and going to try the following, then I can get to stripping some of the good stuff!
20-25ltrs of hot filtered tap water (starting temp too high on higher amounts)
15kg sugar
600 grams tomato paste
1/4 - 1/2 teaspoon citric acid (1/4 then check pH progressively)
240gms yeast
Top up with cool/warm water aiming for around 30dgC
