yeast, eg: for a 25ltr batch = 80gms (X3 = 240gms).
Is this correct that I just need a little less yeast or is it not going to effect anything multiplying all X3?

Cheers,

All good, the yeast will naturally multiply so you only need to add the same amount as for a 25L wash 8-}

This is what I've done for my first wash which is almost done, it's only been 4 days and SG is almost at .990

Started 10ltrs of hot tap water to dissolve, all water ran through filter.
25.5ltr wash after adding a little cooler water
5kg Sugar
200 grams leggo's tomato paste.
1/2 tea spoon citric acid – caused the pH to fall to far – then added about 1.5 teaspoons of Calcium Carbonate to increase the pH
80grams baker’s yeast
Pitched yeast at 35.3dg > pH 5.1 > SG 1.075

I've got a big 100ltr SS fermenter and going to try the following, then I can get to stripping some of the good stuff!

20-25ltrs of hot filtered tap water (starting temp too high on higher amounts)
15kg sugar
600 grams tomato paste
1/4 - 1/2 teaspoon citric acid (1/4 then check pH progressively)
240gms yeast
Top up with cool/warm water aiming for around 30dgC

I do 200 litre ferments of TPW.
4kg tomato paste
55Kg of sugar
100g DAP
30g Epsom Salts
Thumb nail sized piece of butter
100g EC1118 yeast

Dissolve the sugar into water
Dissolve the tomato paste into water
Dissolve the DAP separately from the Epsom salts. Together they won't dissolve.
With an air pump blast air through a 200 mm diameter air stone for one hour.
Have the wash between 25 to 30C.
Take out the air stone, pitch the yeast. The yeast uses up the oxygen in the wash and multiplies, giving enough yeast to do the full ferment.
After 3 days put in another 100g of DAP and it should finish after 7 or 8 days.
When it is finished at 0.985 SG leave for another week for the yeast to settle out and then strip.
With a 50 litre boiler you get 4 strips which gives enough for one spirit run.
Never had a failure using this method.

Wow, just trying some from my first batch now and I didn't expect it to be so easy to drink lol. 25L wash keeping about 1.8L-2.2L total /small amount of heads and almost no tails I think it's mostly hearts maybe ? I did put it back in reflux for 40 mins before collecting heads.

Doesn't sound like I'm keeping much though from 25L (would think a 25L TPW produces about 4-5L in total collected?) Am I cutting too tight/much maybe? Mind you that gives about 4L-5L @40% so it's a decent amount of drinkable isn't it.

Your cuts and amount sound spot on to me, it’s all about quality not quantity for me :handgestures-thumbupleft:

My second batch just finished and i got about 2 litres of hearts out of the 25 litres. As soon as my temperature climbed i stopped collecting and got very little tails also.

My first is done fermenting. Do I need to wait for it to clear at all or is it good to go into the boiler?

As long as all the sediment has dropped and is a pail pink color you should be good to go.

I started two 25lt TPW today. I work 3 weeks on 3 weeks off, I go back to work on Tuesday 7/5 and return 30/5. Probably won’t be finished fermenting before I go? Will it be ok for almost 3 weeks after fermentation stops before distilling?

Just make sure it's sealed (airlock) so no nasty bugs or anything can get it. I've read here that it can be left for many weeks, even months and you shouldn't have any issues.
