Molasses+kale rum.

Postby googe » Fri Apr 22, 2016 6:42 am

Hey all, some may or may not know I have great success with kale for neutrals, and another member elsewhere inspired me to to try it in a rum for nuets, have been wanting to try it for years!.
So, did 20L molasses to make up a 100L wash, 50G of blended kale, 180g bakers yeast. Threw it all together and stired like crazy, within a hour it was getting good head, and within 4 hours it was going mental!, never had a more active rum. It kept powering for 3 days fullon, even with the temps down to 3~5c over night here. It's been pretty in active for two days now, so will run 30L today and see what happens, will report back.

Does the kale add flavour or does it act as yeast nutrient? 50g in 100l aint much..

Just did a search on kale on google and it's a superfood! Apparently. So it would act as a nutrient source!?!?

Googe, would love more info...

Nuet bluc, you'd be surprised how much go it's got. Yep ezitasting, the most nutrient rich veg in the world as far as im aware. What other info are you after?. It makes the best nuetrak ive ever done. We grow it, so it's cheap, easy to grow, but can be expensive in some places to buy, but you only need a bit..

I think he means kale flavour is neutral so wont impact on rum flavour but is high in nutrient for yeast, better fermentation :handgestures-thumbupleft:

Beaten :teasing-tease:

Kale is a nutrient only. Just fired up the boiler to run this.

A method of how you make use of it... Perhaps your recipe?!?! I could try to reinvent your wheel, but I'd get further a lot faster if I just replicate yours, AND in turn, give your idea more credibility!

Spoken like I know what I'm doing! :laughing-rolling:

Most grocers/supermarkets have it wooblyboot. Lol ezitasting.

I ran this yesterday, just so you knoa, nz does not have a good molasses supply. Fancy molasses is more than the price of gold and the good black strap stuff is almost as expensive, $50~60 for a 20kg tub. I use stock feed stuff, get it for 80c a litre and it's the most vile stuff you've ever seen!. The only way I've found to make a half decent rum is the step ferment, anyway...

It fermented out in around five days, very good considering it's been down to 3~4c over night here, usually would take a couple of weeks in them temps. The yield seemed equivalent to usual, and the taste. So, it's improved the ferment times but not changed anything else, what I was after :handgestures-thumbupleft: .

Must be your yeast tas, bakers worked well even with 3~4c over night. You said you used different sugars too?. It's not finished after 17 days?. good luck mate.
