If you know someone who can TIG weld you can get a SS adapter welded onto a ferrule, and use an easy flange on the copper.

I could also have these types of fittings custom made by my supplier, but there's always that thing of "minimum qty" :?

Don't know if this is of any help...but on my 3"VM, I used a 1.5" SS gate valve (big chunky unit from Mac (or Mrs Mac) :handgestures-thumbupleft: )...I cut some copper pipe and it slid nicely inside a brass threaded union as like a 'lining' to the brass collar.

I also pickled the brass first, but don't know if that is a load of crock or what :-

I actually posted the same question a month or so ago.

First I tried 'fitting' a smaller copper pipe into a threaded SS socket, that didn't turn out too good.

If you are not going to be disconnecting the gatevalve from the still individually, what you can do is take some 1" copper pipe, and force screw it into the gate valve threads. You will only get about 2mm or so into the socket, but that is enough (if you have cleaned it all well and roughed it up) and you have to be gentle whilst forcefull to feel if the threads are tapping your tube ;) and then solder it, here is a pic.
