They would probably eat ok, but you need to brine them for months on end first.

Don't reckon they would ferment as they would have fuck all natural sugar unless you added sugar and just wanted the taste, but the whole idea of brining olives is to get rid of the bitterness so if you didn't brine them first it would be bitter as hell.

So yeah, I would eat them and not worry about trying to ferment them :handgestures-thumbupleft:
