Currently wrestling with the ATO to get a distillers licence. Looking forward to learning from you guys how to make gin with a long term plan to operate a small distillery and cellar door.

equipment: 4 plate 6" copper bubbler, 6 plate 4" glass bubbler with 500mm packed section three way thumper sitting on a 50 ltr keg boiler with 6000watts, 2" pot still and a 2" boka.

Thanks for the encouragement guys. Doubleuj, no real practical experience with distilling. I've been reading up on it for probably 3-4 months now and understand the methodology. I do have 10yrs+ commercial brewery experience mainly on the instrumentation and control side of things and have a good understanding of fermentation. Also made my own beers for quite a while. My application for a license has been submitted and I've had some feedback from the ATO who need some points clarified. I'll post my progress with them and any questions in the Beginners Questions forum.
