Big hello to everyone on here.
Ive been making corn whiskey for a few years now from a home made copper pot still approx 65 litre and been having some success.
A friend of mine told me about this forum group to which i replied "whats a forum".
As you can tell i had no idea sites like this existed.

I have been reading posts on here for a few days now and i find it a fantastic place where like minded people share so much useful information and i thank you all for it.

Ok so heres my version on corn whiskey.

I have a 72 litre pot it has a false floor.

To that i add 20 litres of filted rain water and 20 litres of backset that has been in the fridge for1 week to settle out.

Next i add 8kgs of cracked maize which i run through the malt muncher just to give it an extra crack really.

I then heat the water to boiling point and then simmer for 2 hours.

Sorry forgot to mention the rain water is hot as i had the plumber put taps in the shed.
The false bottom i use as an insulater between the con and the double ring gas cooker underneath.
I dont put the gas on full just in case i do burn the bottom.
When i do all rye i connect the hot tap via a hose to my outlet valve and every 20 mins open the valve and purge the bottom of my pot. Havent burnt it yet touch wood.

Anyway after 2 hows on the simmer i turn the gas of and open the lid, then i turn the ceiling fan on 3 and stir every ten or so till it reaches 70 degrees.

I then ad 2kg malted rye, continue stirring ,forgot to mention stirring is with a battery drill and paint mixer.

When it reaches 67 degrees turn off fan and add 2.5 kg of malt barley.

Replace lid and light gas burner on very low just to maintain temp, stir and check temp every 20 and adjust heat accordingly.
Keep here for at least 1 hour or more.

Once finished remove lid and turn fan on 3.

Cool to 40 and move to fermenter, to up water if required.

Pitch yeast i only use bakers yeast only because i personally think the slower the ferment the better.
There is no science behind any of my reasons just makes damn fine likker

Finally after fermentation has finished squeeze grain allow a day or overnight to settle and rack into still.

I do strip run but not hard and fast just a bit hotter than spirit run.

Spirit run slow and steady should get real nice clean likker with plenty of corn malt rye flavours.

Water down to 60 to 70 oak in a barrel.

I have 3 50 litre oak barrels so i alternate.
Oaking i think is the key to awsome whiskey the type you drink straight.

Is that a reflux still, packed section or a really tall pot still? you will get way more flavour from a pot still. Also I would look at changing your sealing method from flour paste to tri clover ferrules and clamps. Love the boiler did you make it? :handgestures-thumbupleft:

Nah its just a pot still with 1 packer i made a smaller version to start with and the flow was dismall so i upted it to 80mm just to get more vapour volume and it works a treat.

The 2 connecting flanges are tapered which give it a very tight fit the paste works just for any pin holes.
Never had an issue ever i use plain atta flour and water.

Flour paste and water is never a sensible option. I would look at a more permanent fix :-B

Safety, safety, safety. Would you use flour paste to fix a hole in a fuel line in the engine bay of your car? Alcohol vapor is flammable and heavier than air so it's going to head straight down to that gas burner. It may have been fine for years but it only takes one little hole and you will have a fire ball.

I'm a newbie, but after researching the easy flange post's, I'm sure your skill level , it would be easy for you to make up some tri clamp flanges, and the bonus is the ease the make fitting up and remove.
