Wow what a Forum..congrats to everyone!

While in the US (a couple of years ago) I dropped into Jack Daniels for the distillery tour ... wow it is truly amazing. Will never forget the look of my 15 year old daughter having a smell of the whiskey dripping through the charcoal... well after several (cough cough) bottles of JD later and a few others for good measure I happened to see a still on ebay... but thank god I also found this community as well... (googling Jack daniels recipes) (didnt get the t500)

Been lurking in the background for a few months ..reading...reading...reading and its time to play.
I have one of JayD's babies coming my way sourced all the goodies and today I put down my first wash ... going to use this as the cleaner for the still and practice on while one of the tried and proven Bourbon recipes bubbles along... Im looking forwards to the journey and learning on the way.. big thankyou to all on this forum for the info to get a newbie started :-)

So its a huge hello from Tim!!

I did the macstill bourbon knock off recipe but with only 100% corn (I know I could have done it cheaper)

But this the the cleaning alcohol run as well as me having a play and learning a few things on the way...

Hi mate welcome to the forum. I have just put down my fifth generation of Odin's Cornflake whisky (Homedistiller.org) and loving the final product. This last wash has been modded to add rye (dark rye bread pumperknickel style) and wheat (what else but Weetbix) to up the flavour complexity. Time will tell...

Hello timv,

I'd suggest running a vinegar run then a steam run through a new still prior to a alco run... be nice to keep something for the your memorable first!

Need a hand finding stuff in Adelaide , let us know

enjoy

Thanks all....

Yes I was going to the steam and vinegar then first wash as per the newbie guidelines... its like an addiction I want the fermenter to bubble quicker (if you check in on it does it take longer :-) )

Had the oddest shop on the weekend heaps of sugar ...vit b tablets...citric acid (didnt know you could get that) fodder shop was wondering why I was asking so many questions about the cracked maize... hey I love my chickens :happy-partydance:

remember cracked Maize is Corn, you can also buy micronised Barley...Rye etc ...etc. or simply crack the grain yourself using a small grain mill... :handgestures-thumbupleft:

Wait till the supermarket lass says "ah more toffee apples this weekend?" and laughs...

Do me a fave, if it's fodder grade corn just throw it into a bucket of fresh cold water and give it a rinse or two before adding to fermenter/stockpot.

a fermenter stir mid ferment doesn't go astray imho...

enjoy

I put down the bwko recipe using the caramalt instead of plain barley...holy crap does that stuff smell and taste nice ...she is bubbling away in shed now and the smell coming off is awesome... cant wait to run this

I put it in one 60lt container i got from gigantis (cheaper and well had to get a 25kg sack of sugar as well) ... now to wait :-)

hello timv,

caramalts make some of the best grain sugar heads I've come across...really does add some depth to spirit and complexity...wd on taking the less travelled but better results path.

If you really want a strong flavoured version try 100gm of a EBC 1100 to 1460 toasted grain...it's a nice drop...here's one I've used in small amounts(50 - 100gm) to great effect...

G'day Tim,
Eh mate seems you're only a stones throw away from our farm close to Kanmantoo, current jobby is making a parrot and waiting for that pale ale to finish fermenting and today off to get some epsom salts and sugar to make a weetbix brew. If you wanna catch up sometime it would be great.
