I'm new to this forum but have a bit of experience.
Been hobby distilling off and on for a few decades.
I'm a expert at making mistakes and a amateur at learning.
Thanks for letting me be a member of this forum.

Location: Several hundred miles from western Australia and straight down.
equipment: 2-1/2" packed CM, Basic pot-still with a thumper, Hybrid stills etc.
I like to build things, if it doesn't work, I'll take it apart and redo it.
If it worked, I'll take it apart and redo it anyway.

equipment: (The Pelican) a 2 inch pot / stripper on 25L electric boiler interchangable with T500 reflux still...... 2 1/2 inch pot still on 50L keg (gas burner).....

That's a hard question, could be rum or a single malt barely.
Honestly, my favorite drink is one I made.
