Blue Mountains Newbie

Greetings from Katoomba,

Only just bought my T500 (the latest model with a full copper condenser), so haven't made anything yet. I was actually slowly kitting myself up for a homebrew kegging system, so already have a fermentation fridge setup out of a wine chiller and heat pad connected to a thermo controller.

I'm really looking forward to experimenting with different styles and would like to try to make a Bundy-esque rum at some stage soon, and work up to a Baileys-ish type Irish Cream for the wife. Any advice on either style from the more experienced would of course be greatly appreciated!

equipment: 4 plate 6" copper bubbler, 6 plate 4" glass bubbler with 500mm packed section three way thumper sitting on a 50 ltr keg boiler with 6000watts, 2" pot still and a 2" boka.

There is plenty of Rum heads around here and plenty of info on how to make it ;-)
