Pickles/Relishes

Has anyone got any pickles, relishes or chutney recipes that they don’t mind sharing? I love this kind of stuff but can never seem to make it as good as some of the jars we get at markets. Mum used to make the best pickles I’ve ever tasted, but she’s lost her recipe book... even my mum is making excuses to keep me in the dark :mrgreen:

The good family recipes are tighly held!
I found a recipe for zucchini pickles a few years back when i had homegrown plants going crazy. I was desperate to find ways of using them, i hate to waste good food.
Anyway, the recipe makes a really nice sweet pickle that i love in my summer sangers at harvest time.

Hells yeah Listo, I love all that stuff too. An old biddy at Mudgee farmers market makes an insane green tomato chutney and charges 18 bucks for it!!
I’m bulk stingy and always try to make something instead of buying it, but I can’t go past this stuff.
One of her ingredients might be,‘crack’.
I’ll be watching this closely for recipes. :handgestures-thumbupleft:

Nah mate, ran the still one day then finally got some rain & a bit of lightning so ended up working the other two.
We drove down to Newcastle the weekend just gone for old boys day, so that fucked that weekend. Should get a go at them this weekend, along with the spicy bbq sauce if I can get some good chillies in town.

Finally got to this today. I think I cut the zucchini up wrong but it still tastes sensational, thanks Dan. The missus & outlaws are pretty impressed with it too :text-thankyoublue:

Glad it hit the spot and "impressed outlaws" its win win.
The zucchini can be cut however you like really, the only thing is the brine will do its job better if the slices aren't too thick.

I just used a knife as I don’t have one of those slicers & the food processor shat itself. I’ll have to get better at it until the boss gets another processor

All good mate... i just use a v slicer. It does a top job, apart from making me nervous with all those sharp little blades ready to cut my finger :laughing-rolling:

They look the goods. Keep them in a sealed jar and they keep for ages.
