Easy Camp oven Sweet Curried Lamb

Postby Lowndsey » Wed Mar 14, 2012 7:10 pm

A quick and easy but very tasty meal I like to knock up in a camp oven when out in the bush.
Fry off a tablespoon or so of curry powder depending on your tastes.
Brown a chopped onion and some diced Lamb.
Then add a decent sized bottle of fruit chutney (bout a 500g bottle) or 2 bottles if you love your sauce.
then a third to a half to a full chutney bottle full of water and some carrots, potatoes, frozen peas and corn or any other vegies that take your fancy. Then I let it simmer slowly for a beer or 12. Serve with rice or fresh buttered bread.

Had a camp oven lamb cook off last night up the bush, three ovens going. Mate did plain leg and veges, i did garlic and rosemary leg and vege's and the chef did an african spiced shoulder with spainach and silabub.

All good after 4 hours in the coals i tell ya :D

Nobody needed a knife to carve.
