Chilli Jam

Ok so this is a ripper chilli jam/chutney
It is actually my mother in law's recipe but I'm pretty sure she won't be lurking on here so I'll take the credit!

1 cup chopped chilli's - use what ever you've got
1 cup chopped apple
1 cup raw sugar
1 cup vinegar - any will do, I like apple cider
1 cup diced onion

It's equal portions, but just like corn flake whiskey it is pretty forgiving so don't stress too much about quantities. A bit more or less of any won't hurt. You can also sub the apple for things like pineapple or even tomatoes for a different flavour

1. Drizzle some olive oil in a large pot on a med high heat
2. Throw in the diced onion and cook until soft and starting to brown
3. Tip in the sugar with the onions. It will start to caramelize pretty quick so keep stirring
4. Once the onion is nice and caramelized, throw in the apple, chilli and vinegar
5. Bring mix to boil, then turn down to lowest heat setting (on smallest burner) and put a lid on it. Let it stew for a couple hours, giving a stir every 15mins or so
6. After 2-3hrs take the lid off and leave on low heat for another hour or so until thickened. I sometimes get a potato masher in there to break up the apple chunks of there are still any
7. Chuck it in any spare cuts jars with lids that seal and you are off

I generally keep a jar on the go in the fridge, the rest can go in the cupboard. Is a great addition to a steak, or bangers, on a burger or a side for just about anything

Have you thought about using a slow cooker?
