Makin Bacon!

Picked myself up some Cure #1 yesterday and a nice piece of Bangalow Pork Belly.

I’m going to make my Brine this afternoon and planning on smoking next Sunday, half on apple wood, the other half on maple.

Anyone else made bacon??

I used to but now do dry aged meats prosciutto pancetta copacolla.. :handgestures-thumbupleft:

50l keg boiler 4" still mount 4" sight glass 1" drain..
4 plate 4" bubbler, 600mm packed section

Yep homemade bacon is great.
If you’re going to be running a smoker anyway do some Pastrami while you’re at it.
Brisket flat or Girello work brilliantly.
Jess Priles guide is a good place to start.
