Bryan's Classic Carpet Bag

G'Day Guy's,
Every once in a while one just has to make my favourite dish which in plain words is just YUMMY :laughing-rolling: :laughing-rolling:

OK to get started

1/2 a kilo of fillet with a pocket cut inside so a nice thick section is needed

Then get a lobster and with the best bits wrap it tight with some eye bacon

got out to the farm and find some fresh mushrooms to slice up and wrap around the cray before the bacon is wrapped.

throw the section into the fillet pocket then baste the fillet with a mixture of black pepper, mushroom salt and a tad of home grown chilli salt

put in oven around 180 for about an hour then in a stove top pan heat some oil

put the carpet bag in the pan and start the cremation process where a nice crust is what we are after.

Enjoy with some roast spuds etc and man this dish is fit for a king :laughing-rolling: :laughing-rolling: :laughing-rolling:

equipment: 4" copper bubbler with a setup for Neutral and a thumper for Whisky and my old 5 litre pot for doing maceration runs and MiniMe the baby pot still

By the way man was that a nice meal

180C for an hour and a half take the bacon off cuts at an hour for some crispy snacks and man one can't get this quality in any food house anywhere :laughing-rolling: :laughing-rolling: :laughing-rolling:
