Bushy's Easy Jerky

Been muckin around with jerky for a while. Tried nearly every method with mostly good results but they were all a little bit more work than a lazy prick like me is up for.
So I say stuff traditional methods, this is how I make a good consistent easy jerky.
I now use a 8 tray dehydrator from fleabay.

You will need
8 kilo Corned Silverside

Marinade
1 cup Brown vinegar
1 cup worcestshire sauce
1 bottle sweet chilli sauce

Sprinkle
Dried garlic
Pepper
Toasted coriander seeds
Chilli flakes
Put this in a Russel Hobbs electric grinder and save your wrists
No salt. Be careful with this.

Put your silverside in the freezer till it's firm. Then slice with your sharpest knife. I aim for as close to 4mm slices as i can get. Put slices in marinade and put it all in a cool spot till tomorrow, which is always still day at my place.

Now ya don't want the meat dripping but ya don't wanta dry it either.I just lay it out on paper towels and wipe the top off a bit. Sprinkle this side, invert to drying tray and sprinkle that side.

Whack it all in your dryer and give it ten or so hours at 65 C.
Absolute piece of piss and is so fuckin moreish I get mates tryin to buy it off me. But like everything in Bushys Barn, it's not for sale.

Good stuff bushy. Jerky was going to be my next project once I get stillin sorted.

The piccy may not do it justice, but that is a truckload of jerky for fifty bucks.That bags about 4" deep.
The pile to the right i'm gonna slice up into 1/2" pieces and place in smaller bags.

Wow thats a shit load , what do you recon dry weight is mate.

I want to try a smaller batch about 1 kg :-D

Fuckin foreigners, wouldn't know a good beer if ya drowned in it. Thing I do like about the EMU draught, besides the delicious flavour, is that one can is one drink. Even i can't fuck that up. Officer :-D

Hey bushy, your 8 tray dehydrator, is it a square one with the rear mount fan & element or is it a round one with the fan on top or bottom?

The square ones with rear fan (excalibur - which is what i have) are 9 trays. So an 8 tray one might be a round one.

I recently bought a deli style meat slicer to accelerate the chopping - works spectacularly to make each and every slice the same thickness. Totally not required and a pretty expensive addition to the kitchen (cost almost as much as a 4" Mac 4 SSG) but i'm loving the ease of use.

I know this is an old post but to give ppl an idea - my last batch started with 5.5 kg meat (no fat at all - will go rancid quickly) and resulted in about 2.2kg jerky. Could be more could be less - depending on how dry or moist you take it

8 tray dehydrator with a potentiometer for temp and a digital timer. I havn't done this recipe for a little while because i struggle to get enough chilli into the final product. What I have been using is the pre made powder spices. Hi-Mountain Inferno blend being an example. Gets the sweat up :handgestures-thumbupleft:

The wife and I bought a dehydrator from Country Brewer using our store credits last year - used it to dehydrate chills and other veggies from our garden at the end of our summer crop.... will definitely have to go down to the butcher and give this recipe a go!!
