Havent done any chooks yet but brine is the only way to go i brine and inject the meat with the brine just to make sure it gets in there good and proper

Little chook in th weber this evening with potatoes, sweet potatoes and carrots. Chucked half a used domino on the heat beads at the start to give it a bit of a smoky hit. Can't wait!

how does the domino work? does it give it a hint of a smokey flavour?

got a pizza oven that is also a smoker that i have never used to smoke in. basically an outside gas oven with a smoker

any good with American oak? i have a whole box full of the stuff that i cant use fast enough

I usually chuck in half a used domino of American oak. If I'm doing a low and slow, I'll sit a couple of half dominoes along the snake. Gives it a nice little smokey flavour :handgestures-thumbupleft:

Turns out yesterday was a total fire ban in SA, so I shouldn't have had a weber... Just a heads up for the guys in more built up areas, you're not allowed to use a coal/wood/heat bead BBQ on total fireban days. x_x

Wonder how many illegal Christmas lunches get cooked in the Weber?

(Not trying to take the piss here... Living in the bush, fires are a very real threat to me. Keep it safe.)

At woollies yesterday they had lamb shoulders on sale for about $10... Low and slow lamb in the weber this weekend! :handgestures-thumbupleft:

Been a while between roasts apparently! I still crank the weber up relatively regularly, did a lamb rack the other night -

Almost out of roasts, I'll have to get out to the farm and get another sheep in the freezer before BBQ season starts!

Just breadcrumbs, garlic, onion, an egg, olive oil, herbs, salt and pepper. Turned out pretty good!

Nice cook Zac! Did a brined chook on the weber rotisserie for dinner tonight. Roast veggies underneath catching the drippings, and a mix of apple and peach wood delivering the smoke.

Did a pork belly in the weber this arvo, with a snake over about 4 hours. Got a little but hotter than it should've and dried out a little bit but still tasty!

No photos because its aaaaaall gone :laughing-rolling:

Nice! Love pork belly. I do a twice cooked Asian style, poaching in chicken stock, coriander, ginger et. for a few hours and then finish on the Webber the next day with some cherry wood. Some ketchup manis - sweet soy sauce and nirvana. Is there anything the Webber can't do? Well except maintain rock steady temps, I battle mine when I do pulled pork. Have to save for a smokey mountain.
