Thai / Indian curry fishcakes

250 grams of soft fish. Blue cod is amazing but expensive for this recipe. (unless you know where to catch them!) Ive made it with monkfish, hoki and salmon. Most fish will work but flaky or meaty fish isn't the best, the cheaper fishes tend to be good for this one as most of the flavour comes from the pastes and texture is half of it for this one.

Either chop/mince the fish finely on a board or put in a food processor with 1 egg. Add 2 or 3 teaspoons of red curry paste or alternatively a paste sachet, Asian gourmet do a tikka masala, vindaloo or butter chicken paste. A teaspoon of chopped lemon grass goes well if you like it.

Medium heat non-stick frypan, dollop spoons of mixture into the pan and flatten, 2 or 3 mins per side, serve with noodles and stir fried broccoli onion cauli red cabbage onion and carrot.

Better than goin out for a meal! Very quick tasty meal you can also use prawns instead of fish.

I love it.

The brother in law won a massive T-Bone tray at the RSL the other day so we went round for a bbq on sunday night and he proceeded to destroy the steaks. I don't know what he was thinking as he used to be a chef, albeit in a seafood resturant, but the meat was as dry as the bloody desert. Luckily he sent me home with a couple and I threw them on the bbq grill last night. Nothing quite like a nice rare steak.

Got home from work today, as i am only doing 2 hrs a day since shoulder re-construction last Friday.
Done the washing up, 1 handed
Sprayed the weeds
Then i chopped up a heap of veggies, and got some neck chops out of the freezer, into the camp oven they went with garlic, tomato paste, pepper, beef stock, Worcestershire sauce, smokey BBQ sauce, and a bit of ginger.
Lit the fire pit and have had it simmering away since lunch time.
I just have the Dumplings to make and pop in before the Mrs gets home from work.
I even put some VB in the fridge for her.
Maybe ill get some tonight :handgestures-thumbupleft:

Soup

We pigged out in Perth last week and drank copious quantities of different beers and wines.
Couldn't even look at spirits... it's mine or nuthin these days.
Had a great time, we did.

Net result - extra kilo or two mostly on the waistline.
So
Soup tonight and tomorrow and... you get the idea :roll: :roll:

Sounds great tell me how the fu;k to you make dumplings every time I try they just mash up with the rest of the food :))

Aussie,
make the dumplings with:
250g self raising flour
50g butter
pinch of salt
pinch of black pepper
tbsp minced garlic
milk or water
method:
mix all ingredients, with enough milk / water to form a dough (similar consultancy to bread)
roll into tsp sized balls
add to top of stew, about 10 min before ready
cover, and do not open lid till done (turn heat up, as dumplings need a mod / hot heat to raise & cook)
do not stir after adding dumplings.
