Suggestions for Pig on a spit

Thinking about doing a whole pig on a spit, (Gas)
Any suggestions for marinades, sauce, basting, cooking time, (25ish kg), stuffings,...... well fuck it, pretty much any and all :-D
Seems straightforward enough from what I found with a few quick searches. Probably looking for things to avoid, as well as things to aim for.

Cheers Phil

Haven't had a pig on the spit since I was a kid. Hope it goes well for you, don't think you can go wrong.

Tie the legs up so they don't flop around and fall off. :handgestures-thumbupleft:

cut it's ears off, or they catch on fire. my only other advice is.... lots of beers!
beers help everything go well!

dipping sauce for once its cooked...

1 jar applesauce (not the cinnamon kind)
1 bott dijonaise mayo ( the plastic squirty kind)
i shot glass soy
1 shot glass kaitaia fire
1 shot glass apple cider vinegar
about 1/2 teaspoon liquid smoke (go easy this will ruin the sauce if its too much!)

i used single shots for my measure... try it first and if you like a spikeier (hmmm sharper?) sauce add more cider, soy and fire..

stir in a jug or whatever and dip your porky delights in as you go..... just watch the liquid smoke.... its well potent if you aint going to cook the sauce!!

:handgestures-thumbupleft:

this recipe is still in development.... havent even got around to naming it yet!

Bit late but always put one end through the mouth and the other through the butt or it just flops around everywhere. :))

Actually it all worked pretty well. I tied it on with a bunch of s/s wire and it cooked good. Only trouble was it cooked so well in the mid section at the base of the ribs it fell apart there. So we had to stop and rehash things a bit. Ended up removing the fore quarters from the spit and finishing the hinds off while the rest kept warm in the vege tray. Crackle worked a treat, (just with salt, going to give the ginger a try on my next roast)
--->wiifm what sort of ginger are you talking about? Fresh, jellied??

Cheers Phil
