Thought I would share my builds over the last few years after being inspired by all you folk.
Been making rum , whisky, vodka, gin etc
Plan to make a 6" thumper next

50l keg boiler 4" still mount 4" sight glass 1" drain..
4 plate 4" bubbler, 600mm packed section

equipment: 4", 4 plate "Frankenfurter" copper bubbler and blockhead on a 50L 3000W electric boiler, 10000W controller - don't even know why I need that much, all grain HERMS system through 18G HLT keg and 50L mash tun.

equipment: T500 has been retired and the 4" glass bubbler, has been christened. With 50 litre inverted keg, two 2400watt elements, 100mm sight glass and 100mm column connection and 1/2" drain. And all resting on a hexagonal frame with lockable castor wheels.

I have also aquired 4 x 20L kegs via gumtree.
One is full of sweet feed whisky with 12 months age
2 are full of rum. 1 just filled and the other has 3yrs age.
3 yr old rum is awesome.
I string a heap of charred oak on some stainless wire which is attached to the bung and hangs inside. Makes it easy to remove and replace.

Recently made a black berry vodka and kaffir lime vodka. Both go great in lemonade.
The kaffir lime vodka is my favorite.

Kaffir lime vodka
thinly slice 7 leaves
soak in 250ml of 95% until leaves colour fade, took about 3-4days from memory
shake bottle a couple of times a day
stain off leaves
dissolve 50g Stevia with 250ml water and add to 95%
I used another 250ml 40% vodka so you end up with a 750ml bottle at ~40%
flavour is strong so you can add additional 40% vodka to taste

Black berry vodka
use same procedure above for the blackberries
I used 100g frozen coles black berries in 250ml 95%.
Soaked about 10-14 days until berries go pale
add water, stevia, vodka as above

Enjoy!

I have also used lemon myrtle leaves with success, the vodka ends up a light brown in colour

Hey spoonjab I reakon you should repost that recipe in the experimental section so it does not get lost in the forum. :handgestures-thumbupleft: def will be trying this. I assume it works with any citrus tree? I just bought a cumquart tree to make some perserves :D
