Thanks guys. Are the probes immersed in vapour or liquid in their normal application or in a thermowell?

I want to use em for floating in wort is all.

There are two on a T500 5Star......one is immersed in quite hot water...the other is in the vapour path. One and I forget which it is has a plastic cover on the probe...the other has a full metal probe...Id go with the metal one.

Gotta sort cuts from a 40 ltr TPW spirit run today/ Friday, so I can get my jars back and then run 60 ltr hook rum wash & 40 ltr hook rum low wines , Saturday
