I came across this article quite some time ago and the link to the page is still active. It is a good article on ph and fermentation from the Ethanol Producer's Database. It has a good explanantion on what pH is and the relationship of pH to the fermentation process with yeast.

Confirms what others have said.... between 4.8 - 5.2pH
Finally figured out what pH stands for
