Yea but if you add yeast to the backset with a little sugar sprinkle after distillation is it worth while doing?

If your doing a wash with 100% backset you may have ph issues but it has been done with rum..if you just want to store the backset the sugar will only introduce possible infection as the sugar is food for bacteria. Better off storing backset as is as it is very acid it your store almost indefinately in a sealed drum. Or you can freeze it..
